The perfect Pizza dough - The basic recipe

If you stick to the following basic recipe, you will make a great pizza. Above all, keep the resting times as indicated so that your dough becomes smooth and airy. If you are going to bake your pizza in the oven at 250 degrees, it is recommended adding olive oil to the dough. However, if you have a pizza oven at home that heats up to 500 degrees, you can leave out the olive oil.

The perfect pizza dough requires a handful of ingredients and a bit of patience.

Ingredients

  • 321 g Flour (type 00 or 550)

  • 208 ml Water (lukewarm)

  • 9.6 g Salt

  • 0.65 g fresh Yeast

  • Optional:
  • 10 g Olive oil

Instructions

  • Place flour in a bowl or dough pan
  • Put the water in a separate bowl and dissolve the fresh yeast in it.
  • Now add approx. 1/5 of the flour to the water-yeast mixture and stir the whole thing into a mushy mass.
  • Now add the salt and continue stirring for approx. 1 min.
  • You can now add the remaining flour to the flour-water-yeast-salt mixture and mix with a ladle or spoon.
  • Optionally add sugar and olive oil and continue to mix.
  • Take the mixture out of the bowl or dough pan and knead by hand for approx. 10min until the dough is very smooth.
  • Resting time 1: Cover the dough and let it rest at room temperature for about 1 hour.
  • After the first resting time, you can cut the dough into equal-sized pieces of approx. 270g each.
  • Shape the pieces of dough into balls and place them on a baking tray or in a dough box.
  • Resting time 2: Now cover the dough balls and let them rest at room temperature for 3-5 hours.

    • Hallo Max, vielen Dank für deine berechtigte Frage. Es ist effektiv so, dass nur eine kleine Menge Hefe genügt, sofern die Gehzeit von 5-6 Stunden eingehalten wird. Das Grundrezept geht von 2 Pizzen aus. Für eine einzelne Pizza benötigst du sogar nur die Hälfte. 🙂 Probier es aus, freue mich auf deinen Erfahrungsbericht. Viel Erfolg, pizzabro
