Just before the weekend you might need a little cooking inspiration. We are happy to share with you PastaBro's new favorite dish: R A V I O L I filled with Taleggio cheese.
Instead of a heavy cream sauce or a classic tomato sauce, this ravioli is served with blanched radicchio, sweet honey and chopped walnuts. This combination works perfectly.
For the first time we used the new sardinian pasta cutter for the 100% egg yolk dough. We ordered this from Laurie. Thank you Laurie/@baltimorehomecook for the beautiful piece of art.

Do you know the feeling that you can’t decide whether you’d rather prepare a pasta dish or gnocchi? Fortunately, this can be combined.
For this reason I made my first C U L U R G I O N E S today. I was supported by a Christmas present (cookbook by letitia clark, a loving combination of Italian dishes and personal stories) and insta reels (e.g. the one from aripastaclub is great).
My conclusion about my culurgiones:
The folding is a bit tricky. It needs more practice. The filling was great. The end result was top in taste. Need more of this stuff. 😋🤩
